Why floor sinks are the first to overflow
A floor sink is the low point for indirect waste in a commercial kitchen. Dish machines, ice machines, steam tables, prep sinks and walk-in condensate lines often drain into it through an air gap, and from there the water runs to the grease interceptor and out to the sewer. When anything downstream narrows, the floor sink is usually the first place the water has nowhere to go.
In most Fullerton restaurants the narrowing is grease. Hot water carries fats and oils out of the dish area in liquid form, they cool in the pipe and stick to the walls, and food solids catch on that coating. Over weeks the usable opening of a pipe can shrink to a fraction of its size. Then one big discharge, such as a dish machine dump during the dinner rush, is more than the line can carry.
Warning signs before a full backup
The first fifteen minutes
These steps protect people and food while you wait for a licensed plumber.
- Stop the discharge.Pause the dish machine cycle and stop draining sinks, ice machines and steam tables that feed the same line. Every gallon you add has to come out of the floor sink.
- Protect the floor.Close off the wet area, put down signs and move food, clean linens and packaging away. If the water is coming from the sewer side, treat it as contaminated.
- Check the interceptor.Look at the last pumping date in your log. A full interceptor can back water up into the kitchen even when the pipes are clear.
- Write down the pattern.Note which drain overflowed first, what was running and whether other fixtures in the building are slow. That tells the plumber where to start.
- Decide on service. If you cannot keep sewage off food-contact areas, stop service in that part of the kitchen. Food safety comes before covers.
Clearing the line: snaking versus jetting
Both have a place. Which one makes sense depends on what the camera or the history shows.
Cable machine (snaking)
- Fast way to punch a hole through a stoppage and restore flow.
- Leaves most grease on the pipe walls, so the line often closes again.
- Useful when the cause is a single object or the line is too fragile for high pressure.
Hydro jetting
- Scours grease from the full pipe diameter and flushes it downstream.
- Takes longer to set up and usually needs a clean-out with good access.
- Not the right choice for pipe that is badly cracked or offset without an inspection first.
What drives the cost of a floor sink call
| Factor | Why it matters |
|---|---|
| Access to clean-outs | Buried, painted-over or missing clean-outs add time or may require new ones. |
| Time of day | Work during service hours or overnight may be billed differently. Ask before booking. |
| Length and route of line | Long runs under the slab to a distant interceptor take more equipment. |
| Method used | Snaking, jetting and camera inspection are often priced separately. |
| Interceptor condition | If the interceptor must be pumped first, that may be a separate service. |
Questions to ask the plumber
- Where exactly was the blockage, and was it before or after the interceptor?
- Did you clear it with a cable or a jetter, and how much grease is left on the walls?
- Would a camera inspection change what you recommend?
- How often should this line be maintained for a kitchen our size?
- Is anything in our daily routine making this worse?
Common questions
Can we keep serving while a floor sink is backed up?
Only if you can stop all discharge to that line and keep any wastewater well away from food, prep and dish areas. If sewage is involved or the water keeps rising, stop service in that area until it is cleared.
Why does the floor sink back up only during the rush?
The line still carries a trickle, but a partly blocked pipe cannot keep up when the dish machine, sinks and ice machine all drain at once. Peak-only backups are an early warning of a narrowing line.
Is a floor sink backup the landlord's problem or ours?
It depends on the lease and where the blockage is. Lines serving only your kitchen are often the tenant's responsibility. Check the lease and tell the property manager either way.
