Where kitchen gas problems start

In a commercial kitchen, gas runs from the meter through building piping to a manifold or individual shutoff valves, then through connectors to each appliance. Ranges, fryers and griddles are often on casters so they can be pulled out for cleaning, and the flexible connectors and quick-disconnects that allow this take daily wear. Grease, heat and repeated moving are hard on them.

SoCalGas serves the gas meter and supply up to the meter. Piping and appliance connections on the building side are the property's responsibility, and work on them should be done by a licensed contractor. Before any gas work, confirm the contractor's CSLB license at cslb.ca.gov.

Adding or moving gas equipment

  1. Total the load.List every gas appliance and its rating. A new fryer or larger water heater may exceed what the existing piping or meter can supply.
  2. Talk to SoCalGas if needed. If the meter needs a larger capacity, that is arranged with SoCalGas.
  3. Permit.New gas piping and appliance installations commonly require a permit and inspection. Check with the city.
  4. Install and test. The contractor installs the piping, then pressure tests or leak-checks it as required.
  5. Coordinate the hood.New cooking equipment may affect the hood and fire suppression layout, which have their own requirements.

Questions to ask a gas contractor

  1. What is your CSLB license number, and does its classification cover this gas work?
  2. Is our existing piping sized for the equipment we want to add?
  3. Will you pull the permit and be present for inspection?
  4. What connector and restraint will you use on wheeled equipment?
  5. How will the line be tested before we cook again?

Common questions

Can staff tighten a leaking gas connector?

No. If you smell gas, leave and call 911 or SoCalGas from outside. Repairs to gas connections should be done by a licensed contractor.

Who fixes a leak at the gas meter?

SoCalGas handles the meter and the service up to it. Call them from a safe place if you suspect a leak there.

Do we need a permit to replace a fryer?

Replacing like for like may be handled differently than adding new equipment or piping, but rules vary. Check with the city and ask your contractor what applies.
